Chop a large quantity of tomatoes, red bell pepper, onion, and carrot. Keep garlic cloves whole or mince them.

Add fresh thyme and a good amount of fresh, chopped basil.

Toss all the vegetables with a generous drizzle of olive oil, salt, and black pepper. Optionally, add a handful of cashews for extra creaminess in the sauce.

Spread the seasoned vegetables on a baking tray. Roast them in a preheated oven at approximately 200°C for about 40 minutes, or until they are soft and slightly caramelized.
