Description

Warm up with a comforting bowl of homemade lentil soup! This simple, healthy recipe is packed with vegetables and flavor, perfect for a cozy meal, especially in cooler weather.

Instructions

  1. Wash the lentils very well. Place the washed lentils in a pot.
  2. Add the prepared vegetables: onion, garlic, tomatoes, and carrots.
  3. Add water to cover the ingredients.
  4. Add a dash of cumin to the pot.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes until all ingredients are tender.
  6. Blend all the cooked ingredients in a blender until smooth.
  7. If you prefer a very smooth soup, strain it after blending.
  8. Return the blended soup to the pot. Add bouillon cube (optional), salt, black pepper, and more cumin to taste.
  9. Stir well. Bring the soup to a boil for one or two minutes, then remove from heat.
  10. In a small pan, melt ghee or butter. Add minced garlic and cumin. Sauté until fragrant and golden.
  11. Pour the hot lentil soup into serving bowls.
  12. Drizzle the optional garlic and cumin topping over each serving. You can also serve it with a pat of butter and a dash of chili powder/flakes.
