Description

Create a vibrant and refreshing Tuna and Bean Salad! This hearty and flavorful salad combines various fresh ingredients, crisp pickled cucumber, and a zesty homemade dressing, perfect for a light meal or side dish.

Instructions

  1. Soak the White Beans for two hours. Boil them until tender, then cool them.
  2. After cooling, freeze them for future use (they can last for up to a month).
  3. Chop the Green Beans, Artichoke Hearts, Beetroot, Grapes (or any preferred fruit), and Tomatoes.
  4. Prepare the Leafy Greens (Lettuce, Arugula, Spinach, or a mix).
  5. Chop the Pickled Cucumbers. (Note: Pickled cucumber is used because fresh cucumber can give a fishy odor to tuna salads).
  6. Prepare the Tuna and Onion.
  7. In a small bowl, combine Mustard, Olive Oil, Balsamic Vinegar or Apple Cider Vinegar, Honey, a small dash of Salt, and Lemon Juice.
  8. Mix well until thoroughly combined.
  9. In a large mixing bowl, combine the prepared White Beans, Green Beans, Artichoke Hearts, Beetroot, Grapes, Tomatoes, Leafy Greens, Pickled Cucumbers, Tuna, and Onion.
  10. Pour the prepared dressing over the salad ingredients. Mix everything gently until all components are well coated.
  11. Serve immediately, or chill before serving for a refreshing cold salad.
