Instructions
-
Soak the White Beans for two hours. Boil them until tender, then cool them.
-
After cooling, freeze them for future use (they can last for up to a month).
-
Chop the Green Beans, Artichoke Hearts, Beetroot, Grapes (or any preferred fruit), and Tomatoes.
-
Prepare the Leafy Greens (Lettuce, Arugula, Spinach, or a mix).
-
Chop the Pickled Cucumbers. (Note: Pickled cucumber is used because fresh cucumber can give a fishy odor to tuna salads).
-
Prepare the Tuna and Onion.
-
In a small bowl, combine Mustard, Olive Oil, Balsamic Vinegar or Apple Cider Vinegar, Honey, a small dash of Salt, and Lemon Juice.
-
Mix well until thoroughly combined.
-
In a large mixing bowl, combine the prepared White Beans, Green Beans, Artichoke Hearts, Beetroot, Grapes, Tomatoes, Leafy Greens, Pickled Cucumbers, Tuna, and Onion.
-
Pour the prepared dressing over the salad ingredients. Mix everything gently until all components are well coated.
-
Serve immediately, or chill before serving for a refreshing cold salad.
