Prepare the Chicken

  1. Season the Chicken Breast with Olive Oil, Garlic Powder, Onion Powder, Paprika, Salt, and Black Pepper. Mix everything well to coat the chicken.

Sumac Onion Relish

  1. In a small bowl, combine the Thinly Sliced Red Onion and Sumac. Mix them together.

  1. Heat a small amount of Olive Oil in a skillet over medium-high heat.
  2. Place the seasoned chicken in the skillet and cook for 5-6 minutes per side, or until it cooks through and gets nice grill marks.
  3. Remove from heat and slice if not already sliced.
  4. Slice the Avocado in half, remove the pit, and then carefully slice the flesh into even pieces directly in the peel. You can then scoop them out easily.
  5. Open your chosen Bread. Layer with the cooked Grilled Chicken, Avocado Slices, Tomato Slices, Sumac Onion Relish, and fresh Rocca (Arugula).
  6. Close the sandwich and serve immediately. You can customize any of these ingredients to your liking.
