Coffee Tres Leches

Instructions

  1. In a bowl of a stand mixer whip the eggs, sugar & vanilla on high speed for 5 to 7 minutes until doubled in volume & super airy & pale.
  2. In a bowl sift flour, baking powder & salt & mix well.
  3. Add half of the flour mix into the egg mixture & give it a gentle mix then add the milk & finally the remaining flour.
  4. Mix until just combined to prevent deflating all the air incorporated.
  5. Lightly butter the baking tray & pour the cake mix.
  6. Baking in a preheated 180 degree oven for 20-25 minutes.
  7. Remove from oven & let it cool.
  8. Prepare 2 shots of espresso & let it cool completely.
  9. In a large pitcher mix the milk, evaporated milk, condensed milk & coffee.
  10. Poke the cake with a fork all over & pour the milk mix onto the cake.
  11. You can reserve 1/2 a cup of the milk mix for serving.
  12. Refrigerate the cake overnight to soak up all the liquid.
  13. In a bowl of a stand mixer whisk the instant coffee, sugar & boiling water until doubled in volume & stiff peaks.
  14. Spread the whipped coffee onto the cake & dust with cocoa powder.
  15. Keep in mind to only spread the whipped coffee when you’re about to serve the cake because it tends to dissolve with time & enjoy♥️
