Peel the tomatoes (optional), then cut them into rings or cubes, depending on your preference.

Heat olive oil in a pan, add the sliced garlic and chili pepper, and sauté.

Add the chopped tomatoes to the pan and mix well with the oil and garlic.

Add salt and black pepper to taste.

Cover the pan and let it cook on low heat for about 10 minutes, until the tomatoes soften and release their oils.

Optionally, sprinkle some dried mint for extra flavor.
