Instructions
-
Prepare the Vegetables: Finely chop green pepper, red pepper, and onion. Place them in a food processor with olive oil and blend. Strain the mixture well to remove excess water.
-
Prepare the Sauce: Mix the strained vegetable water with tomato paste, a pinch of salt, black pepper, and paprika. Set aside.
-
Prepare the Kebab Mixture: In a bowl, mix the minced lamb with the strained vegetable blend. Add salt, black pepper, paprika, parsley.
-
Knead the Mixture: Knead the meat and vegetable mixture for about 10 minutes to ensure the ingredients are well combined. This step helps the kebab hold its shape.
-
Shape the Kebabs: Form the mixture into long, flat shapes around wide skewers. Alternatively, shape them by hand if skewers are unavailable.
-
Grill the Kebabs: Cook the kebabs on a charcoal grill for an authentic smoky flavor. Alternatively, use a grill pan or oven. Brush the kebabs with the prepared sauce as they cook to enhance the flavor and color.
-
Prepare the Flatbread: Brush flatbread with the remaining sauce and lightly toast.
-
Assemble and Serve: Place the kebabs on the flatbread. Garnish with a sprinkle of sumac, chopped onion, and a drizzle of tahini. Serve warm with your favorite side dishes.
