In a bowl, mix garlic, mustard, honey, lemon juice, olive oil, thyme, paprika, salt, and pepper. Set aside.

Make small cuts in the chicken to allow the marinade to penetrate.

Peel and cut the potatoes into large chunks.

Slice the onions into thick rings.

Place the chicken, potatoes, and onions in a large baking dish. Pour the marinade over them, ensuring everything is well-coated. Massage the marinade into the chicken and vegetables for maximum flavor.

Preheat the oven to 200°C. Cover the dish with foil and bake for 50 minutes.

Remove the foil and turn on the broiler for the last 10 minutes to give the chicken and potatoes a golden, crispy finish.
