Chicken and Vegetable Noodles

In a bowl, mix the chicken with soy sauce, vinegar, honey, minced garlic, paprika, salt, pepper, and thyme. Let the chicken marinate for 15-20 minutes.

Heat the vegetable oil in a hot pan or wok, then add the marinated chicken. Stir-fry for about 4 minutes, or until the chicken is golden and cooked through.

Remove the chicken and set it aside. In the same pan, add the mixed vegetables and cook until just tender (but not overcooked).

Add the vegetable stock and mix well. Once the vegetables are done, return the chicken to the pan and stir everything together.

Cook the noodles according to the package instructions, then drain them and add them to the pan.

Add the sweet and sour sauce and a little soy sauce, then mix well until everything is coated. Stir-fry for another 2-3 minutes to combine all the flavors.
