Jumbo Green Olives Pickling – (Tofahy)

Instructions
Boil water in a large pot, then blanch the olives for 4 minutes.
Drain the olives in a colander and let them cool completely.
In a large bowl, combine diced lemons, red and green chili slices, black seed, lemon juice, sweet pepper paste (or chili paste), celery, grated carrots, and garlic cloves. Mix well.
For every cup of cold water, dissolve coarse salt, citric acid, sugar, and turmeric. Mix until fully dissolved.
In sterilized jars, layer the olives with the prepared filling.
Add lemon slices and garlic cloves on top to seal the flavors.
Pour the brine solution over the olives, ensuring they are fully submerged.
Seal the jars tightly.
Leave the jars at room temperature for 7 days to ferment.
