  1. Combine minced chicken with butter, red bell pepper, green chili, onion, parsley, cornstarch, baking powder, and all spices.
  2. Ensure the onion and red bell pepper are well-squeezed to remove excess water.
  3. Knead the mixture thoroughly until smooth and well-combined.
  4. Lightly oil your hands and shape the kofta into elongated or round patties.
  5. Use the back of a knife to create gentle ridges on the surface for a classic kofta look.
  6. Preheat the oven to 180°C.
  7. Place the kofta on a greased baking tray or in the air fryer.
  8. Bake for 25 minutes.
  9. In the last 5 minutes, switch on the broiler to give the kofta a golden crust.
  10. Heat a small piece of charcoal until red-hot.
  11. Place the hot charcoal in a small dish inside the baking tray.
  12. Drizzle a few drops of oil or ghee over the charcoal and cover immediately to allow the kofta to absorb the smoky aroma.
