  1. In a large bowl, combine the lemon halves with the chopped red, yellow, and green bell peppers, grated carrots, and chopped hot peppers.
  2. Add the black seed, sliced garlic, safflower, and coarse salt, fine salt to the bowl.
  3. Mix all the ingredients thoroughly until well combined. Let the mixture rest for about 30 minutes to release the lemon juices and allow the flavors to meld.
  4. Once the mixture has rested, transfer it to a clean, sterilized jar.
  5. Pour the vinegar and olive oil over the mixture in the jar, ensuring it is covered evenly.
  6. Press the mixture down in the jar to ensure the oil and vinegar are fully absorbed into the ingredients.
  7. Seal the jar tightly and store it in a cool, dry place to ferment for a few hours or overnight.
  8. The pickled lemons will be ready to serve within the same day.
