  1. Grind rolled oats into flour using a blender or food processor.
  2. In a mixing bowl, combine sifted oat flour, sifted almond flour, baking soda, baking powder, and a pinch of salt.
  3. In another bowl, whisk together milk, melted butter, egg, vanilla extract, and honey.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Add a bit more milk if the batter is too thick.
  5. Heat a non-stick skillet over medium heat and add a small amount of oil.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
  7. Repeat with the remaining batter, adding more oil to the skillet as needed.
  8. Serve pancakes warm with a dollop of jam between each pancake, and top with butter and a drizzle of honey.
