Preheat the oven to 200°C. Pierce the eggplant with a fork in several places and place it on a baking sheet. Roast in the oven for about 40 minutes or until the eggplant is completely soft.

Remove the eggplant from the oven. Peel off the skin and place the flesh in mixer.

Then add tahini, hot pepper, chopped parsley, minced garlic, and mix until smooth.

Transfer the mixture to a serving dish, add olive oil, lemon juice, salt, black pepper, cumin, dried coriander and stir

Garnish with parsley and olive oil.
