Instructions
Slice the eggplant into round pieces and put in a straining bowl.
Add salt then place heavy object on top of eggplant to remove excess water.
In a mixing bowl, add Salt, Pepper, Coriander ,Cumin, lemon Juice and Garlic to Grated Tomato and Pepper then mix well.
Pat dry the eggplant slices, coat in flour, and then fry in hot oil.
Once fried, transfer to a straining bowl.
Add seasoning mix on top of the eggplants and serve.
