In a bowl, mix minced garlic with grated ginger, dark & light soy sauce, orange juice, oyster sauce, balsamic vinegar, honey, salt & pepper.

Line an oven tray with 2 layers of foil and 2 layers of parchment paper.

Add the rib and rub the marination all over it.

Cover the rib with both layers of parchment paper then both layers of foil.

Preheat oven on 200 degrees celsius, add the short ribs and let it cook for 1 hour then lower the heat to 130 degrees celsius and leave for 5 hours. (Before the end, I brushed it with honey for extra flavor and color).
