One Pot Saudi Kabsa

In a pot, add oil, ghee, cinnamon stick, cardamom, bay laurel , clove, star anise and green chili pepper.

Add thinly sliced onions and stir, then add minced garlic and stir on low heat till they wither.

Season with curry, turmeric, paprika, seven spices, coriander and stir well.

Add rinsed and dried chicken, season with salt and cook it on both sides.

Add tomato paste, peeled and diced tomatoes and raisins (optional).

Cover the pot and let the chicken boil for 15 minutes on low heat.

Cover the chicken with hot water and let it boil for 30 to 40 minutes depending on the chicken size with the lid covering the pot.

Set the chicken aside.

Remove any solid spices from the sauce but not the raisins.

Add rinsed and soaked rice for an hour, cover the pot and leave it to cook on low heat for 30 minutes.

Brush the chicken with butter and bake it in the oven.

Add the cooked rice in the serving plate then add the chicken.

Decorate with nuts and coriander.
