Tortilla Cup – Breakfast Bowl

Bring a cake pan (like the one in the video), brush it with olive oil. Add tortilla bread and brush it with olive oil.

Bake in a preheated oven at 200 degrees celsius for 15 minutes.

In a bowl, mix cooked beetroot cut into cubes with minced garlic, greek yoghurt, beetroot water, lemon juice, salt, pepper and chopped spring onion.

Assemble the tortilla cup with arugula as a base then add smoked turkey or chicken, chopped cherry tomatoes, pan fried mushrooms and jalapeño pepper.

Add the beetroot mix on top and shredded cheddar cheese.
