Season the beef escalope with salt, black pepper, seven spices, olive oil, and vinegar. Let it marinate for about an hour.
For the stuffing, melt butter in a pan with some oil. Sauté chopped onions, then add your choice of finely chopped vegetables like mushrooms, eggplant, or carrots.
Place a spoonful of the vegetable mixture on each piece of marinated escalope. Roll the escalope tightly, folding in the sides first to secure the filling, then rolling into a cylindrical shape.
For cooking, place sliced onions, bell peppers, and garlic cloves in an oven-safe roasting bag or dish. Arrange the stuffed escalope rolls on top, dot with butter, and pour in the broth.
Seal the roasting bag or cover the dish with foil, then bake in a preheated oven at 180°C for about 35 minutes.
Serve the stuffed escalope rolls with yellow rice or pasta, as preferred.
