In a skillet, put a teaspoon of oil and the diced mushrooms and saute over high heat, stirring constantly, until they turn golden. Add garlic and stir well.
Add fresh spinach leaves, or you can use frozen spinach after making sure it is well drained of water.
After the spinach leaves reduce in size and stirring well for a few minutes, set the spinach and mushrooms aside in the pan.
In the other half of the pan, add the butter and flour and stir them well for 3 minutes until they turn golden. Mix all the ingredients together.
Add water or chicken broth and milk and stir well. Add the bouillon cube, salt, pepper and cream and stir. Bring to boil.
Remove from the heat, add a layer of mozzarella on top, and place it in a preheated oven until it reaches a golden color.
