Spinach and Cheese Pies (fiteer) using Saj Bread

  1. In a large bowl, combine the chopped spinach, Kashkaval cheese, sumac, lemon juice, black pepper, and salt.
  2. Mix thoroughly until the ingredients are well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the grated onions and a pinch of black pepper.
  5. Sauté until the onions soften and are fully cooked.
  6. Mix the sautéed onions with the spinach filling.
  7. Lay a piece of Saj bread flat and place an adequate amount of filling in the center.
  8. Sprinkle a layer of mozzarella cheese over the filling.
  9. Roll the bread tightly to form a log.
  10. Use the flour and water mixture to seal the edges.
  11. Arrange the rolls on a baking tray.
  12. Lightly brush the tops with olive oil.
  13. Preheat the oven to 180°C.
  14. Bake for 15-20 minutes or until golden and crispy.
