Spiced Rice with Roasted Meat

Prepare the Boiled Meat

  1. In a deep pot, heat the butter and oil until melted.
  2. Add the meat and sear it until browned on all sides.
  3. Mix in the carrot, celery, onion, and whole spices. Stir to combine.
  4. Season with salt, black pepper, ground cinnamon, and seven spices.
  5. Pour enough hot water to cover the meat and let it simmer on low heat for 1 hour and 15 minutes or until tender.
  6. Remove the meat and strain the broth for later use.

Prepare the Rice

  1. In another pot, sauté the pre-cooked minced meat with peas and toasted vermicelli.
  2. Add ground cinnamon, seven spices, and nutmeg. Stir well to combine.
  3. Mix in the washed basmati rice and combine with the sautéed ingredients.
  4. Pour the strained meat broth over the rice and season with salt if needed.
  5. Cook the rice on medium heat until it absorbs the broth, then reduce the heat and cook until fully done.

Assemble the Dish

  1. Place the cooked rice on a serving platter.
  2. Arrange the boiled or roasted meat pieces on top.
  3. Garnish with toasted nuts of your choice.
