In a large bowl, combine the all-purpose flour, yeast, and sugar. If desired, add sesame seeds, anise, or fennel to the dry mixture.

Add oil and ghee/butter (or just oil) to the dry ingredients.

Knead the mixture well for about two minutes, rubbing the fat into the flour until it resembles wet sand.

Add the yogurt and warm water to the mixture.

Knead the dough for about five minutes until it is soft and pliable. Add more warm water gradually if the dough needs it.

Cover the dough and let it proof (rise) for only half an hour.

While the dough is proofing, prepare your chosen filling(s). For the savory option, have your salty Baramily cheese ready.

For the sweet option, mix cinnamon, sugar, and sesame seeds.

Take a portion of the proofed dough. Flatten it slightly. Place your chosen filling (savory cheese or sweet mixture) in the center.

Gather the edges of the dough around the filling to form a ball. Gently flatten the ball into a disc shape by pressing down on it.

After shaping, you can dip the top of the qoras in a little water and then in sesame seeds for extra flavor and appearance.

Arrange the shaped qoras on a baking tray. Let them rest and proof again on the baking sheet for 10 to 15 minutes before baking.

Preheat your oven to 180°C. Bake the qoras for 25-30 minutes, or until they are golden brown and cooked through.
