  1. Heat ghee in a pot and sear the beef cubes briefly.
  2. Add boiling water to cover the meat, then season with cardamom, bay leaves, black pepper, ginger powder, and salt.
  3. Cover and simmer over medium heat until the meat is tender.
  4. In a separate pot, heat ghee and sauté the basmati rice briefly.
  5. Add a ladle of the meat stock and enough water to cook the rice.
  6. Add cardamom, bay leaves, salt, stock cube. Cover and simmer on low heat until the rice is fluffy.
  7. In a small bowl, mix minced garlic with olive oil, tahini, yogurt, salt, and black pepper. Stir until creamy.
  8. Layer the cooked rice on a large serving platter.
  9. Sprinkle crispy bread on the side. Pour the tahini-yogurt sauce generously.
  10. Cut the boiled meat into smaller cubes and sear them in ghee for added flavor. Arrange the meat over the sauce.
  11. Top with toasted nuts, raisins, and chopped parsley (optional).
