  1. Pat the chicken thighs dry, ensuring the skin is dry before applying the marinade.
  2. Prepare the marinade by crushing garlic, rosemary, lemon zest, chili flakes, salt, and black pepper together in a mortar and pestle.
  3. Add melted butter and mix in the honey. Pour the warm butter-honey mixture over the chicken thighs. Massage the chicken with the marinade to coat evenly.
  4. After 30 minutes, remove the dish from the oven every 10 minutes and baste the chicken with its own juices to keep the meat tender and the skin crispy.
