Roast Beef with Gravy & Vegetables

Prepare the Beef Roast:

  1. Use a sharp knife to make small incisions in the roast beef and insert whole garlic cloves into the cuts.
  2. Season the beef with salt, black pepper, and nutmeg or seven spice mix.

Sear the Beef:

  1. In a deep pot, heat olive oil and butter.
  2. Add rosemary or thyme and whole garlic cloves.
  3. Sear the roast beef on all sides until golden brown. Remove and set aside.

Prepare the Vegetables:

  1. In the same pot, sauté mushrooms, carrots, leeks, onions, and potatoes.
  2. Deglaze the pot with red vinegar or balsamic vinegar, scraping the bottom to release flavors.

Assemble in the Oven Bag:

  1. Place the roast beef and sautéed vegetables in an oven bag.
  2. Secure the bag tightly and place it on a baking tray.

Bake the Roast Beef:

  1. Preheat the oven to 200°C.
  2. Bake for 1 hour and 30 minutes.

Rest and Slice the Roast Beef:

  1. Remove the beef from the oven and let it cool completely (approximately 2 hours).
  2. Once cooled, slice the roast beef into thin pieces.

Prepare the Sauce:

  1. Strain the cooking juices from the oven bag and serve as a rich sauce.
