In a mortar and pestle or a small bowl, mash together the Garlic cloves, Basil leaves, Salt, Black Pepper, and Lemon Zest.

Add the Lemon Juice and Olive Oil to the mashed mixture and stir well to combine.

Place the cleaned Shrimp in a bowl, add the prepared marinade, and mix well to coat the shrimp.

Cover the bowl and refrigerate for at least 15 minutes (or longer for more flavor, if time permits).

Rinse the Quinoa thoroughly under cold running water until the water runs clear. Drain well.

In a pot, combine the rinsed Quinoa, Lukewarm Water, and Salt. Stir gently.

Bring to a boil, then reduce the heat to very low, cover the pot, and let it simmer for 15 minutes.

While the quinoa is simmering, heat a skillet over high heat.

Add the marinated shrimp and sauté for a few minutes until they turn pink and opaque. Shrimp cooks very quickly, so be careful not to overcook them.

After 15 minutes, add the cooked Shrimp to the Quinoa in the pot.

Gently fluff and mix the quinoa with a fork. Cover again and let it continue cooking for another 10 minutes on very low heat.

Once done, the quinoa should be fluffy and the liquid absorbed. Serve immediately.
