Cut the pineapple into half and hollow out the pineapple.

Chop the pineapple and set aside.

In a wok add oil then add shrimp and stir till golden.

Remove the shrimp and in the same wok add sesame oil, vegetable mix (sweet corn, green beans, peas and carrots).

Add diced pineapple, ginger, garlic, oyster sauce and fish sauce then stir.

Set the vegetable on the side of the wok then pour whisked eggs and mix till combined.

Add the pre-cooked rice, soy sauce and spring onion then stir.

Put the shrimp back and mix well.

Serve in the hollowed pineapple and enjoy.
