Choose yellow lemons, not green ones. Wash them very well.

Boil the lemons for only ten minutes. Discard the boiling water.

Soak the boiled lemons in clean water for at least 12 hours. Change the water every 4 hours.

For every cup of boiled and cooled water, add one large tablespoon of salt. If you use 4 cups of water, use 4 tablespoons of salt and one coffee cup of vinegar.

Place the boiled and soaked lemons in a clean glass jar.

Add green chili peppers if desired, as they give a very nice flavor. If you want it spicier, add dried as desired.

Pour the prepared brine (water, salt, and vinegar) over the lemons, ensuring they are well submerged.

Close the jar tightly. Open it for the first time after 4 days, not less than that.

After exactly one week, transfer the jar to the refrigerator.
