Instructions
Sugar Syrup (شربات)

In a pan, off heat, add water and sugar and mix well.

Bring to a boil then add lemon juice and glucose honey (optional). Leave for 10 minutes.

Transfer to a bowl and let it cool completely.
Custard

In a pan, off heat, add milk, flour, cornstarch, sugar, egg yolks and mix well.

Turn on heat and stir well until texture thickens.

Turn heat off then add butter and vanilla and mix well.
Preparing the Gullash

Bring serving/ oven pan and cut the phyllo sheet edges to fit the pan.

In a bowl mix oil and melted butter. (You can replace with ghee)

Brush pan with oil mixture.

Start layering: Put 6-7 layers (or less) sheets and brush well between sheets. Then add a layer of custard then another 6-7 layers of brushed phyllo sheets. (Note: do not brush the 2 layers surrounding the custard).

Cut the gullash into slices.

Bake in a preheated oven at 200 degrees celsius in middle rack until bottom part is golden. Then turn on the broiler until top part is golden.

Add the sugar syrup on top and enjoy.

You can replace custard with muhallabeya or nuts.
