Slice the white onions and green peppers into thin strips. Mince the garlic.

In a large pan or skillet, heat olive oil.

Add the sliced onions and reduce the heat to very low. Sauté the onions, stirring occasionally, until they caramelize and soften. If they start to stick or burn, add water.

Add the minced garlic and sliced green peppers to the pan. Stir and cook until the peppers soften slightly.

Season the vegetables with salt and black pepper.

Remove the cooked vegetables from the pan and set them aside.

In the same pan, add butter and a small amount of oil to prevent the butter from burning. Increase the heat to high. The pan must be very hot.

Add the thinly sliced steak. Cook for 3 to 4 minutes, stirring constantly, until it's browned but still tender. Do not overcook.

Season the steak with salt and black pepper. Add soy sauce (if using) and stir quickly.

Return the cooked onions and peppers to the pan with the steak. Reduce the heat to very low.

Arrange slices of provolone or white cheddar cheese on top of the steak and vegetable mixture.

Cover the pan for a minute or two to allow the cheese to melt completely.

Slice your sandwich rolls open. Spread a thin layer of mayonnaise and a small amount of butter on the inside.

In a separate pan, or the same pan after removing the filling, toast the bread until golden brown and crispy.

Fill the toasted rolls generously with the cheesesteak mixture. Serve immediately.
