Philly Cheese Steak Sandwich

Heat butter in a skillet over high heat. Sear the steak on both sides until browned.
Place the seared steak in a pot with garlic, rosemary, and water. Cover and cook on low heat for 4 hours.
Use the same skillet for the demi-glace sauce. Melt butter, scrape the browned bits, and add the steak broth and corn starch mixed with water. Simmer until thickened.
In the same skillet, caramelize the sliced onions in butter over low heat.
Remove the steak from the pot, slice it thinly, and return it to the skillet for a quick sear. Optionally, glaze with honey and BBQ sauce.
Place the steak in the skillet and top with cheddar cheese. Cover until the cheese melts.
Toast bread rolls, add caramelized onions, then layer with steak and melted cheese. Drizzle with demi-glace sauce.
Serve immediately.
