preparing the Dough

  1. In a cup, mix the warm water, yeast & sugar. let it rise.
  2. In a bowl, put the flour, salt, olive oil and the water with yeast & sugar. Mix well till it starts forming a dough.
  3. Transfer the dough to the work pad and start kneading for 5-10 minutes till it forms a dough ball.
  4. Transfer the dough ball to a bowl, cover it with olive oil. Line the bowl with olive oil as well.
  5. Cover it and leave in a warm place to rise.

Preparing the Sauce

  1. In a pan, heat some olive oil. Add the onion and stir till it softens, then add the garlic & stir for less than 1 minute.
  2. Add the tomato juice, salt, black pepper, sugar & tomato paste. let them boil on medium heat for 5-10 minutes till you get a nice red color.
  3. Turn off the heat, add the basil leaves & oregano.
  4. Let it cool then blend in a blender. Sieve the sauce to make it smooth.

Preparing the Pizza

  1. In a pan or a cast iron, put some olive oil, then roll out the dough.
  2. Make some holes in the dough with your fingertips, then add some olive oil on top.
  3. Since its a pan pizza, cook the dough first before adding the toppings.
  4. Bake in a preheated oven on 200 degrees for 15 minutes or till the base gets a nice golden color.
  5. Take it out of the oven and spread the sauce, add some grated parmesan (optional) & mozzarella cheese. Spread some sauce on top.
  6. Pop in the oven, turn on the broiler and place the pan near the heat. Leave it till the cheese melts.
  7. Take it out and sprinkle some fresh oregano on top.
  8. Note: This dough size is suitable for a pan size 24 or 26.
  9. Note: you can add any topping you like along with the cheese.
