Place the duck in the marinade, ensuring it is fully submerged. Seal with cling film and refrigerate overnight for 24 hours.

Remove the duck from the marinade and pat dry thoroughly. Discard the marinade.

Stuff the cavity of the duck with onion, celery, salt, pepper, orange zest, rosemary, and garlic. Truss the duck with kitchen twine to maintain its shape.
