Marinade Preparation:

  1. In a bowl, combine brown sugar, salt, cloves, peppercorns, bay leaves, and orange slices. Add enough water to cover the duck.

Marinating the Duck

  1. Place the duck in the marinade, ensuring it is fully submerged. Seal with cling film and refrigerate overnight for 24 hours.

Preparing the Duck

  1. Remove the duck from the marinade and pat dry thoroughly. Discard the marinade.

Stuffing and Seasoning

  1. Stuff the cavity of the duck with onion, celery, salt, pepper, orange zest, rosemary, and garlic. Truss the duck with kitchen twine to maintain its shape.

Seasoning and Roasting

  1. Rub the duck with oil, salt, pepper, and paprika. Optionally, sprinkle rosemary over the surface.

Roasting Instructions

  1. Preheat the oven to high heat (around 220°C). Place the duck on a roasting rack in a baking tray, breast side up.
  2. Roast for 30 minutes at high heat to crisp the skin, then reduce the heat to 180°C and continue roasting for 3 hours, basting with rendered duck fat every 30 minutes.

Final Glaze

  1. Mix Worcestershire sauce, honey, duck fat, and orange zest. Brush the duck with this glaze during the last 10 minutes of roasting for a glossy finish.

Serve

  1. Once roasted to perfection, let the duck rest for a few minutes before carving. Serve with seasoned rice and garnish with fresh orange slices.
