  1. Preheat your oven to 170°C 15 minutes before you begin.
  2. Prepare a 25x35 cm (10x14 inch) baking pan by greasing it with butter or ghee, then dusting it with flour and tapping out any excess.
  3. In a bowl, whisk together the flour, cornstarch, baking powder, and a small pinch of salt.
  4. Using a stand mixer or a hand mixer, whip the eggs with the sugar and vanilla for 7 minutes on high speed. The mixture should become creamy, light in color, and double in volume.
  5. Add the warm milk and mix on low speed for just 30 seconds.
  6. Add the warm melted butter (or oil) and mix again for another 30 seconds.
  7. Sift the dry ingredients (flour, cornstarch, baking powder, and salt) into the wet mixture gradually.
  8. Mix one last time on very low speed, just until the flour disappears. Do not overmix.
  9. Pour the batter immediately into the prepared pan. Tap the pan on the counter twice to release any air bubbles.
  10. Use a wooden skewer to run a line down the middle of the cake to prevent it from cracking.
  11. Bake in the preheated oven on the middle rack with heat from the top and bottom for 40-45 minutes.
  12. Let the cake rest for 10 minutes after you take it out of the oven before slicing.
  13. You can serve it plain or with the quick orange glaze, which you can make by mixing powdered sugar with milk and vanilla.
  14. Add the glaze to each slice right before serving, as it will set quickly.
