Instructions

  1. Slice the eggplants then sprinkle some salt.
  2. In a pan, add butter then saute the chopped onion. Add minced beef and stir until beef is cooked.
  3. Fry the sliced eggplants in frying oil.

The Sauce

  1. In a pan, melt butter then add minced garlic and stir.
  2. Add tomato paste and vegetable stock & stir.
  3. Add tomato juice and more vegetable stock and stir.
  4. Season with salt and pepper. Bring to a boil and let it simmer.

Assembling

  1. In a pyrex or casserole, start layering: tomato sauce then a layer of eggplant then minced beef and repeat the layers.
  2. Put in the oven for 20-30 minutes at 180 degrees celsius.
