The Sauce
Instructions

Slice the eggplants then sprinkle some salt.

In a pan, add butter then saute the chopped onion. Add minced beef and stir until beef is cooked.

Fry the sliced eggplants in frying oil.
The Sauce

In a pan, melt butter then add minced garlic and stir.

Add tomato paste and vegetable stock & stir.

Add tomato juice and more vegetable stock and stir.

Season with salt and pepper. Bring to a boil and let it simmer.
Assembling

In a pyrex or casserole, start layering: tomato sauce then a layer of eggplant then minced beef and repeat the layers.

Put in the oven for 20-30 minutes at 180 degrees celsius.
