  1. Grill the pre-marinated Mexican chicken breasts until fully cooked and golden brown.
  2. Chop the lettuce, boil the chickpeas, and prepare the sweet corn, cherry tomatoes, onion, and kidney beans.
  3. If using avocado, dice it and drizzle with lemon juice to prevent browning.
  4. In a bowl, mix mayonnaise, cooking cream, lemon juice, olive oil, chopped coriander, black pepper, and salt.
  5. Blend the mixture in a food processor until smooth and creamy.
  6. Drizzle the dressing over the salad ingredients and toss to coat evenly.
  7. Slice the grilled chicken into long strips and arrange them on top of the salad.
  8. Sprinkle spicy chips and shredded mozzarella cheese over the salad.
