Mexican Rice with Chicken

  1. In a pan, add oil then pan fry the chicken from both sides until golden.
  2. Once golden, remove the chicken and set it aside.
  3. In the same pot, sauté the chopped onion and bell pepper.
  4. Add the Basmati rice, sweet corn, red beans, Mexican spices, and smoked paprika. Stir well to ensure the flavors combine.
  5. Add jalapeño or hot pepper to taste, depending on the desired spice level.
  6. Return the chicken to the pot to cover the rice mixture. Allow the rice to absorb all the flavors.
  7. Once the rice has fully absorbed the flavors and the cooking is complete, remove the pot from the heat.
  8. Garnish with fresh lemon slices, chopped jalapeno, and cilantro before serving.
