Note: If you salt your stock, make sure to decrease the amount of salt when adding it to the rice.
Cooking the Beef

In a pot, add Ghee and Mastic Gum and sear the Meat until it develops color.

Add the Veggies and Boiling Water and bring it to a boil. Remove any excess foam on the surface.

Add the Whole Spices, cover, and let it cook for 1 1/2 hours or until tender.

Lay the Eggplant Slices on a baking tray and drizzle with Oil. Roast them in a 200-degree Celsius oven for 30-40 minutes or until they develop color. You can choose to fry the Eggplant instead.

Add the Spices to the Rice and mix well.

In a non-stick pot, add a teaspoon of Ghee. Start by arranging the long Eggplant Slices around the sides of the pot. Then layer the bottom with Sliced Tomato and Carrots along the sides.

Add the Beef, sprinkling a bit of Seven Spices and Cinnamon over it.

Add the remaining Eggplant, and finally the Rice. Gently press down the Rice to compact everything together.

Add enough Beef Stock to just cover the Rice. Check the Salt and add more if needed.

Keep it on high heat until the liquid is almost absorbed and no longer visible, but you can still hear the sound of the liquid. Cover and cook on low heat for 40-45 minutes.

Turn off the heat and let it sit and rest for 10 minutes.

Turn it onto the serving dish and garnish with Toasted Almonds or Pine Nuts. Serve with Yogurt.
