Mahshy; Stuffed Zucchini & Aubergine

Instructions
- In a pan, add oil and pan fry the diced onions.
- Add tomato juice/ puree, stock cube and the spices. Let it simmer.
- Add the rice, stir then turn off the heat.
- When rice is not hot, add the minced coriander, dill, parsley and some mint. Add pomegranate molasses and stir.
- Stuff the mahshy; zucchini, green bell pepper and aubergine with the rice. Do not overstuff to leave room for the rice to get cooked.
- Heat any broth you have (chicken, meat or vegetable) then add a pinch of pomegranate molasses and stir.
- Transfer the mahshy to a pan then add the broth.
- Cook on high heat until water is absorbed then lower the heat.
