Louisiana Mushroom Pasta

Cook the pasta in salted water according to the package instructions. Reserve 3 cups of pasta cooking water and drain the rest.

In a large pan, heat some oil. Add the sliced mushrooms and cook them until golden and slightly browned. Remove the mushrooms from the pan and set them aside.

In the same pan, add the diced onion and bell peppers, butter and sauté until softened and fragrant. Add the minced garlic and cook for another minute.

Add the flour and whisk for 1-2 minutes until the flour turns golden.

Gradually add the reserved pasta water (or plain water) while whisking to form a smooth sauce.

Stir in the chicken stock cubes, cooking cream, lemon zest, and lemon juice. Season with black pepper, paprika, dried parsley, oregano, and thyme to taste.

Add the cooked mushrooms back into the pan, along with the cooked pasta. Stir everything together and let it simmer for 2-3 minutes.

Serve the pasta in a dish and sprinkle shredded cheese on top before serving.
