Soak the lentils for 2 hours.

Strain the lentils then add to a pot with boiling water and 1 tablespoon of cumin.

Bring to a boil then leave on low heat until it cooks.

Strain the lentils and leave to cool.

To prepare the dressing, mix olive oil, balsamic vinegar, honey, salt & pepper.

Chop all the salad ingredients and mix with the dressing.

Leave to marinate for 2 hours in the fridge and enjoy!
