Lentil Salad

Ingredients

Instructions

  1. Soak the lentils for 2 hours.
  2. Strain the lentils then add to a pot with boiling water and 1 tablespoon of cumin.
  3. Bring to a boil then leave on low heat until it cooks.
  4. Strain the lentils and leave to cool.
  5. To prepare the dressing, mix olive oil, balsamic vinegar, honey, salt & pepper.
  6. Chop all the salad ingredients and mix with the dressing.
  7. Leave to marinate for 2 hours in the fridge and enjoy!
