Peel and finely chop the onions using a food processor. Strain the onions to separate the juice, reserving it for later.

In a bowl, mix the minced beef with the strained onions, spices, flour, cornstarch, and baking powder. Knead well until the mixture becomes smooth and uniform.

Dip your hands in the reserved onion juice (mixed with a tablespoon of oil) to shape the kofta. This prevents sticking and adds flavor.

Form the meat mixture into logs on wooden skewers, pressing gently to shape. Refrigerate for 1 hour to firm up.

Preheat the air fryer to 180°C. Place the skewers in the fryer and cook for 25 minutes. Flip the skewers, then cook at 200°C for another 5 minutes for a golden finish.

Serve immediately with bread, tahini sauce, or your favorite side dishes.
