Homemade Falafel with Mozzarella, Harissa or Pickled Lemon

Prepare the Mixture:

Soak the dried chickpeas & fave beans for 12 hours.

Finely chop the dill, cilantro, parsley, and leek along with the green chili peppers.

Add them to a food processor with the soaked and drained chickpeas and fava beans.

Add the onion and garlic, then blend until the mixture is smooth and well combined.
Season the Mixture:

Add the ground coriander, cumin, salt, black pepper, baking powder, and cornstarch.

Knead the mixture thoroughly until all ingredients are evenly incorporated.
Shape the Falafel:

Take a small amount of the falafel mixture and place it in a falafel mold.

Add a cube of mozzarella, a spoonful of harissa or pickled lemon in the center.

Cover the filling with more falafel mixture and seal it to form a ball.

Dip the falafel in sesame seeds to coat it.
Fry the Falafel:

Heat oil in a deep pan.

Fry the falafel until golden brown and crispy.
