Homemade Falafel with Mozzarella, Harissa or Pickled Lemon

Prepare the Mixture:

  1. Soak the dried chickpeas & fave beans for 12 hours.
  2. Finely chop the dill, cilantro, parsley, and leek along with the green chili peppers.
  3. Add them to a food processor with the soaked and drained chickpeas and fava beans.
  4. Add the onion and garlic, then blend until the mixture is smooth and well combined.

Season the Mixture:

  1. Add the ground coriander, cumin, salt, black pepper, baking powder, and cornstarch.
  2. Knead the mixture thoroughly until all ingredients are evenly incorporated.

Shape the Falafel:

  1. Take a small amount of the falafel mixture and place it in a falafel mold.
  2. Add a cube of mozzarella, a spoonful of harissa or pickled lemon in the center.
  3. Cover the filling with more falafel mixture and seal it to form a ball.
  4. Dip the falafel in sesame seeds to coat it.

Fry the Falafel:

  1. Heat oil in a deep pan.
  2. Fry the falafel until golden brown and crispy.
