Instructions

  1. To make the falafel, add garlic, onions, crushed beans, chickpeas, greens, salt, pepper, and water in a food processor and blend to form a paste. Shape into patties and deep fry.
  2. To make the sauce, in a bowl, add tahini, vinegar, garlic, yogurt, mayonnaise, cheddar cheese, water, salt, pepper, green onions, tomatoes, and chili pepper. Mix well.
  3. In a shamy or baladi bread, add arugula leaves, eggplant, potatoes, falafel, egg, pickles, and sauce.
