  1. Grill a large eggplant, peel it and mash it well.
  2. Add yogurt, tahini, minced garlic cloves, salt & pepper.
  3. Add lemon and parsley and crushed walnuts and mix all together.
  4. In a frying pan add olive oil then add chickpeas.
  5. Add paprika and cumin, stir for a while till all mix.
  6. Add the prepared eggplant to the serving plate.
  7. Make a whole in the middle of the eggplant mix, then add the chickpeas and olive oil mix prepared (Watch video for technique).
