  1. Boil the potato until tender, then cut into cubes.
  2. Boil the egg until hard-boiled, then chop into cubes. Combine with the cubed potato.
  3. Add chopped red onion, salt, pepper, green olives, and shredded cheese to the potato and egg mixture.
  4. Layer phyllo pastry sheet then add another one (watch video for technique)
  5. Place cheese on the bottom layer of phyllo pastry.
  6. Spoon the potato and egg mixture onto the pastry sheets, then fold the sides over to create an envelope.
  7. Brush the top with more of the oil and butter mixture.
  8. Heat a pan over medium heat and cook the pie on each side until golden brown and crispy.
