  1. In a large pot, season your boiling water generously with salt.
  2. Add the elbow macaroni and cook just until half-cooked, as it will continue to cook in the sauce. Drain the pasta and set it aside.
  3. In a medium saucepan, add butter over medium heat.
  4. Once the butter is melted, add all-purpose flour. Whisk continuously for about 45 seconds.
  5. Slowly add the whole milk, whisking constantly to prevent lumps.
  6. Continue whisking over medium heat until the sauce thickens to your desired consistency.
  7. Add the spices, garlic powder, onion powder, smoked paprika, mustard powder (or paste), salt, and black pepper.
  8. Stir well to incorporate the spices. Reduce the heat to low.
  9. Add the grated cheese mix to the saucepan.
  10. Whisk until the cheese is completely melted and the sauce becomes velvety and shiny. Keep the heat low to maintain the smooth texture and shine of the cheese.
  11. Finally, add the cooked macaroni back into the saucepan with the cheese sauce.
  12. Toss to ensure each noodle is thoroughly coated with the delicious sauce.
  13. Serve the Mac and Cheese immediately while it's hot, gooey.
  14. For a golden crust, pour the Mac and Cheese into a medium-sized baking dish. Sprinkle additional cheese on top (optional).
  15. Place it into a preheated oven at 180°C on the middle rack for 20 minutes, or until the top is golden and bubbly. Serve immediately.
