In a large pot, season your boiling water generously with salt.

Add the elbow macaroni and cook just until half-cooked, as it will continue to cook in the sauce. Drain the pasta and set it aside.

In a medium saucepan, add butter over medium heat.

Once the butter is melted, add all-purpose flour. Whisk continuously for about 45 seconds.

Slowly add the whole milk, whisking constantly to prevent lumps.

Continue whisking over medium heat until the sauce thickens to your desired consistency.

Add the spices, garlic powder, onion powder, smoked paprika, mustard powder (or paste), salt, and black pepper.

Stir well to incorporate the spices. Reduce the heat to low.

Add the grated cheese mix to the saucepan.
