Instructions
- In a small bowl, combine cornstarch with milk.
- Stir well until dissolved and no lumps remain. Set this mixture aside.
- In a saucepan, add full-fat milk, sugar, and vanilla.
- Place the saucepan over low to medium heat. Stir occasionally.
- Before the milk boils, when it feels warm to the touch, add unsweetened cocoa powder and salt (to enhance the flavor).
- Whisk continuously until the cocoa is fully dissolved and there are no lumps.
- Pour in the prepared cornstarch and milk mixture while continuously whisking.
- Continue to whisk gently until the hot chocolate just comes to a boil. As soon as it starts bubbling, turn off the heat immediately.
- Pour the hot chocolate into your favorite mugs. You can add whipped cream or marshmallows on top, and optionally use a kitchen torch to toast the marshmallows.
