Ingredients

Instructions

  1. In a large bowl, combine the room temperature butter, oil, eggs, vanilla, Nescafe, and powdered sugar.
  2. Using a hand whisk or a wooden spoon, mix until the mixture is light, creamy, and well combined.
  3. In a separate bowl, add salt and the baking powder to the flour.
  4. Stir well to ensure the dry ingredients are evenly distributed.
  5. Add the dry ingredient mixture directly to the creamy coffee mixture.
  6. Do not use an electric mixer or knead the dough. Instead, gently mix with a spoon or spatula until the flour just disappears and a soft dough forms. Stop mixing immediately once the dough comes together.
  7. Prepare a piping bag with a star-shaped nozzle. Fill the piping bag (do not overfill it) with the dough.
  8. Pipe the cookies onto a baking sheet lined with baking paper (ensure it's not wax paper). Leave some space between each cookie.
  9. For the classic coffee bean shape, make a small indentation in the center of each cookie using a chopstick or the back of a spoon.
  10. If you prefer not to pipe, take a portion of the dough and place it in the refrigerator for about 30 minutes until it firms up.
  11. Once chilled, roll small portions of the dough into balls, then shape them by hand into desired forms. Create an indentation in the center of each, if desired.
  12. Preheat your oven to 170°C.
  13. Bake the cookies on the middle rack for 7 to 10 minutes, or until the edges are lightly golden. The baking time may vary depending on your oven and cookie size.
  14. Once baked, do not remove the cookies from the baking sheet immediately. Allow them to cool completely on the sheet before handling. They will firm up as they cool.
  15. Melt some chocolate (dark, milk, or white) using a double boiler or microwave. Drizzle or dip the cooled cookies in the melted chocolate as desired.
